Belinda Sullivan

Belinda Sullivan

Founder & Managing Director

Growing up in the hospitality industry, Belinda started out early in her career managing her parents restaurant before moving on to a national catering company. In 2004 she started her own catering business focused on just sandwiches, which very quickly grew into what Flavours Catering + Events is today –one of Sydney most successful catering companies.

Belinda leads by example, and prefers actions over words. Her hands-on approach in the day-to-day operations shows her unwavering dedication to Flavours.

Company culture is and has always been a top priority for her. She focuses on making a supportive environment where every team member feels valued and appreciated for their unique contributions, taking care of all of the team personally. Believing strongly in the importance of each employee, she takes the time to carefully select the right team members who truly embody the Flavours spirit. Recognition and appreciation aren’t just occasional gestures—they’re woven into the fabric of the company’s culture under her leadership, ensuring that everyone feels like part of the Flavours’ family.

In addition to teamwork, Belinda is also passionate about helping each team member grow personally and professionally. Despite industry challenges, she’s committed to keep a supportive atmosphere where everyone can thrive. This dedication has resulted in Flavours’ strong team cohesion and exceptional company culture, and reflects her genuine commitment to the success and well-being of Flavours team members.

Belinda also has a genuine passion for all things culinary, and believes that food contributes in such a significant way when celebrating special occasions. When she isn’t at Flavours, she loves to spend time with her husband and sons on the Gold Coast, dining out and exploring new restaurants and loves a good Netflix series power watch!

Her favourite menu item is the compressed watermelon, togarashi, feta, mint & lime canape.

Chris Watts

Chris Watts

General Manager

Having worked in food related roles since being a teenager, Chris brings a great wealth of hospitality experience to Flavours. He was the first employee Belinda took on following the launch of Flavours, starting as Chief Sandwich Maker 19 years ago, and evolving into the role of General Manager. Chris is a foodie at heart and an incredibly valued contributor to the Flavours business in many areas, particularly finance, logistics, IT, product development, systems, processes and HR. He admits his inner geek loves a good excel spreadsheet!

No one can deny Chris’ incredible work ethic, loyalty and dedication to all things Flavours and the Sullivan Family. Without his skills, passion, and constant finger on the pulse in all areas, Flavours would not be what it is today. But be warned! Don’t leave chocolate around in the office, he’ll always be the first to sneak it away to his desk.

Chris loves to spend time with his family boating and beaching, and experimenting in his kitchen at home.

His favourite menu item is the house baked chocolate fudge brownie (no suprises there Chris!).

Brad Pattison

Brad Pattison

Head Chef

Brad joined the Flavours team in 2022 and brings with him a strong and varied background in various kitchen management roles. His experience in catering for large guest numbers in alacarte, café, club, restaurant and production kitchen environments has been a valuable asset to our team. Brad has a happy, calm and friendly manner, making him an approachable and supportive Head Chef, leading our kitchen team to daily success, while working so well with the wider Flavours team.

He loves that no two days are ever the same at Flavours, in a role that gives him great work life balance. He is a self-confessed sports nut – it’s the only trivia topic he’s great at! He loves everything sport, both watching and participating, particularly cricket in summer and football in winter.

His favourite menu item is the Smoked salmon, crème fraiche, dill, preserved lemon petite savoury tart because he feels it is such a simple canape but with great bursts of flavour.

Andreia Sampaio

Sous Chef

Andreia, one of the talented leaders of our amazing kitchen team, brings a wealth of culinary experience and a genuine passion for food to every dish she creates. For her, the “journey of catering and event cuisine” (as she likes to call it) is not just about great flavour and beautiful presentation—it’s about connecting with people, celebrating life, and crafting unforgettable moments. Whether it’s the harmonious blend of ingredients or the memories a dish can evoke, Andreia believes that food has the power to tell stories and create magical experiences.

Originally from Brazil, Andreia’s culinary career has taken her across Australia, where she has worked with some of the industry’s most prestigious Australian names, including Merivale’s venues at The Sydney Cricket Ground (SCG) and at the opening of the Sydney Football Stadium. There, she faced the challenge of scaling restaurant-quality menus to accommodate the vast operations of two major sports venues. She has also worked at the International Convention Centre in Sydney, one of the largest kitchen operations in the world, and curated unforgettable dining experiences for guests cruising around the breathtaking Sydney Harbour. From five-star hotels to à la carte restaurants, Andreia’s diverse experience has shaped her approach to creating both, exceptional dishes and memorable experiences.

At Flavours, Andreia thrives in her role as Sous Chef. Her warmth, culinary expertise, and professional skills make her an invaluable member of the team. She loves the camaraderie within the kitchen brigade, where teamwork is at the heart of everything they do.

A fan of simplicity done right, Andreia’s favourite dish to prepare (and enjoy!) is Roasted Boneless Chicken with charred lemon, kale & extra virgin olive oil—an elegant, flavourful dish that’s always a crowd favourite.

Outside the kitchen, Andreia enjoys a variety of hobbies. She has a deep passion for historical books, and you’ll often find her reading or listening to audiobooks in her spare time. But when she’s not learning about the past, she’s really enjoying the moment: Having spent some time in Queensland, she developed a love for extreme experiences—whether skydiving from great heights or scuba diving in the deep blue. Though, as she jokes, always with at least 24 hours in between!

With her dedication, infectious energy, and love for food and creating memorable experiences, Andreia is an integral part of the Flavours team, ensuring that every one of our guests enjoys the best dining experience.

Sharon Watts

Sharon Watts

Kitchen Operations & Dispatch Manager

Sharon has been with Flavours for over 18 years and brings an extensive knowledge of the retail food industry as well as quality assurance and logistics. Sharon loves working in the great team environment at Flavours and is such an integral part of it, ensuring all orders leave complete and on time by running the important (and very very busy) dispatch process. Her kind, caring and undeniable work ethic make her a vital and very valued team member at Flavours.

Every chance she gets, Sharon enjoys taking a long walk and loves spending time with her family. And yes, Sharon is Chris, our general manager’s mother; but she’s not only a mother to Chris; she’s like a mother to all of us at Flavours.

Her favourite menu items (she couldn’t choose just one) is the duck pancakes and the brioche toast with brie, red currant jelly, rosemary & walnut dust canape.

 

Tiger Thanaporn

Chef de Partie

Don’t let his fierce name fool you – Tiger is one of the warmest and most passionate members of the Flavours Catering + Events team. With experience in Michelin-star kitchens, fine dining, high-volume catering, plus a degree in Creative Advertising, Tiger combines creativity and expertise in every dish he touches.

From supervising BOH teams to mentoring staff and innovating unique recipes, Tiger’s career highlights include working as Executive Sous Chef at STAGE Restaurant (featured in the Michelin Guide Bangkok) and refining his craft at L’Atelier de Joël Robuchon. His unwavering dedication to culinary excellence truly shines through.

Among his favourite items on the Flavours menu are the crispy Potato rosti, mushroom parfait, lemon zest, rosemary, and the vibrant Mexican fiesta Salad – a perfect reflection of his passion for balancing flavours and textures. Outside the kitchen, Tiger loves fishing. “Even if I only catch a tiny fish, it can still make my day!”. He also enjoys seeking out new foods and dishes for inspiration, developing new menu items, experimenting with flavour combinations, and creating visually stunning dishes that leave a lasting impression on every guest.

At Flavours, Tiger is more than a Chef de Partie – he’s a driving force behind our creative kitchen. His attention to detail, artistic presentations, and pursuit of perfection ensure every event is unforgettable. We’re incredibly lucky to have him on our team, blending passion and warmth that makes him a joy to work with. When he’s in the kitchen, you can taste the love and care in every bite!

Tarrah Lukic

Tarrah Lukic

Key Relationship Manager

Tarrah is a vibrant professional with over 25 years of experience in the hospitality and events industry in Sydney. She’s worn many hats throughout her career—Chef, Event Manager, Venue Manager, and Sales and Logistics Specialist—now bringing all her valuable multi-skilled expertise to the Flavours team. Known for her warm and professional approach with clients and fostering a fantastic work environment for our team, Tarrah is dedicated to exceeding expectations and ensuring that every Flavours experience is perfect. Her passion for high-quality catering and exceptional events shines through in everything she does as our Key Relationship Manager.

On her days off, you can find Tarrah getting lost in a good book in the park with her dogs, enjoying the sunshine and the fresh air. But she also has a spooky side—she’s a Halloween superfan! Her dogs even have names inspired by classic horror characters. Just wait until you meet the adorable Wednesday!

She also loves exploring new restaurants and is always on the lookout for great live music. And what about her favourite item from Flavours? The avocado toast—“This would be my go-to breakfast item any day of the week… it’s so good!” she says.

So, you already know: if you hear a phone ringing with the Addams Family soundtrack, she’s there! Ready to make your event one of a kind. With her wealth of experience and infectious enthusiasm, you can be sure she’ll be dedicated to creating memorable moments for you and your guests!

Gabriel Barduca

Gabriel Barduca

Marketing Officer

Gabriel brings such a positive attitude along with a broad range of experience from marketing & communications to photography, food and beverage service to concierge & reception. He holds a bachelor’s degree in Business Communication, and a second bachelor’s degree in Advertising. With a passion for photography and a range of professional experiences in this field, including running his own business in branding photography, Gabriel’s background makes him the perfect addition to our team.

Argentinian, with both Italian & Spanish heritage, Gabriel has traveled and explored over 30 countries, spending some time living in Canada, but is now keen to call Australia home. He has a huge curiosity for the arts and every way to express himself: acting, singing, visual design & writing. He’s also learning how to play several instruments including piano, saxophone & guitar. As a proud Argentinian, he learned to dance the Tango as a kid, when he was 8. Creative guy!

Gabriel says that he loves that Flavours has such an inclusive friendly team environment which is sometimes hard to find in the hospitality or any professional world. He has a few favourite items from our menu including The Italian Antipasto, and Brownies.

Alex Fernandes

Alex Fernandes

Client Services Manager

Having transitioned from family owned restaurants and cafes to catering and events, Alex brings friendly and genuinely helpful customer service to Flavours. She is one of the first voices you get if you call the office and has a such a great rapport with our clients; she loves to work on a variety of different events with them. The favourite part of her job is menu tasting days! Alex loves dining out, playing soccer and discovering new hiking paths.

Her happy place is either at the beach or cleaning and she considers herself a pretty good espresso martini maker.  Alex’s favourite menu items are the chicken & mushroom arancini balls, black cherry baby blini’s and alllllll our sweet items (and yes Alex & Nicole are sisters)

Diane Crismale

Senior Catering & Events Manager

Coming from a strong event management and guest services background in a variety of fabulous hotels and venues, Diane brings a great amount of experience to the Flavours team. Born and bred in France, Diane moved to Australia in early 2018 and has not looked back since, especially now she is an owner in an Australian race horse that she hopes will have a big race win one day.

While French is her native language, she also speaks Spanish, loves skiing, shopping and being with her beautiful black Labrador. Diane has completed a wide range of studies both in France and Australia in event and hospitality management, tourism, leisure and more that have contributed to great success in her career journey. We feel very lucky to have her as part of the team to work with our clients for fantastic event outcomes.

She loves working at Flavours because of the supportive and welcoming environment (and because the food is amazing she says!)

Her favourite menu items are the house made chocolate fudge brownies and the Souvlaki bbq package

Jenn Whiteside

Jenn Whiteside

Senior Catering & Events Manager

Jenn is a bubbly, enthusiastic member of the Flavours team and brings with her a wealth of customer service experience from both retail management and event / marketing coordinating roles. She is a valued Event Manager within our team & works closely with our clients to ensure their event comes to life just the way they envisaged.

Jenn loves to travel and is very excited to finally be able to take an overseas holiday toward the end of this year. She loves trying new restaurants, wine tasting and spending time with her loved ones. She has a slight obsession with cows (the highland cow is her favourite animal) and her favourite Flavours menu items are the Chocolate Brownies & the Peking Duck Pancakes

Nicole Antonopoulos

Senior Catering & Events Manager

Managing family owned restaurants and cafes for over 15 years, Nicole certainly understands food and customer service. She particularly loves helping our clients host events they can be proud of.  Coming from a large Greek family, she understands the importance of food at such events and gives our clients great guidance when making their menu selections, reducing some of the stress of their event planning.

In her spare time Nicole loves to spend time with her nieces and nephews, going to the beach and trying out new quirky cafes in her local area. She loves watching classic movies and has a cool talent of being able to recite lines from a movie after just one watch.

Her favourite menu items are our house baked chocolate brownies and the pumpkin arancini.

Chris Trueman

With over 14 years of hospitality leadership experience across some of Sydney’s most respected venues, Chris Trueman brings a wealth of operational, event, and customer service expertise to the Flavours team. Known for his calm but fun leadership style, Chris has managed large-scale restaurant operations, set up and launched new venues, won AGFG hats, and trained and led high-performing teams with a focus on exceptional service, product knowledge, and seamless delivery.

Chris’s career includes senior roles at The Botanist, Tequila Mockingbird, Armorica Grande Brasserie, and The Joey; where he played a key role in launching and managing successful events and dining experiences. His strengths lie in team development, financial management, client relationships, menu creation, beverage programs, and crafting thoughtful well-executed events from concept to delivery.

He’s also tech-savvy, with skills in POS systems, digital design, reservation platforms, and staff rostering – always bringing both creativity and structure to his work.

Chris is passionate about delivering memorable guest experiences and creating a strong team culture. He thrives on the details, from curating a bespoke menu to ensuring service runs like clockwork. Originally from the UK, Chris is also fluent in French, a wine and woodfired meat lover, and has a great eye for design and presentation.

Chris’s favourite Flavours menu items include our mini savoury croissants, caramel filled beignets, peking duck pancakes, cheeseburger spring rolls, and our Mixed Harvest Collection signature sandwiches.

Catering and Events Coordinator

Picc is a dedicated Catering and Events Coordinator at Flavours Catering + Events. She joined the company in 2016 as a Catering & Events Assistant while pursuing her studies. It didn’t take long for her administrative prowess and keen eye for detail to shine, securing her a permanent role on the office team, where she has been a cornerstone ever since.

Though she holds a master’s degree in environment, Picc’s true passion lies in hospitality and event planning, with a particular focus on corporate events. She excels at helping clients plan and book successful and seamless corporate functions, ensuring every detail is flawlessly executed. From large-scale conferences to intimate business meetings, Picc’s dedication to delivering exceptional service makes her a trusted partner for clients looking to impress.

Her love for creating memorable experiences shines through in every event she coordinates, and when it comes to indulging in the company’s culinary delights, Picc’s favourite treat is the little lemon tarts—a perfect reflection of her refined taste and appreciation for the finer things in life.

Valentin Verdois

Originally from France, Valentin Verdois brings over 15 years of hospitality expertise—and a touch of European charm—to his role as Catering & Events Coordinator at Flavours Catering + Events.

Valentin has a strong background in venue management and event coordination, having led operations at one of Sydney’s busiest pubs. From bespoke engagement parties to birthday bashes and corporate functions, he’s known for tailoring every event with precision, creativity, and genuine care.

He’s also a highly skilled barista, with a passion for exceptional service and a knack for making a perfect coffee under pressure (which comes in handy on event days!). His calm presence, strong client focus, and eye for detail make him a valued part of the Flavours team.

Outside of work, Valentin is a scuba diving enthusiast, ice hockey player for the Macquarie Bears, and soon-to-be husband—recently engaged and enjoying planning his own special day.

His favourite menu items from Flavours are the chicken finger sandwiches, French pastry mini quiche, and anything sweet!

Somer O'Connell

Catering & Event's Assistant

Somer brings a fresh, enthusiastic perspective to the Flavours team as a Catering & Events Assistant. A recent graduate with a Bachelor of Commerce majoring in Event Management, Somer combines her formal training with hands-on experience in hospitality, social media marketing, and live event execution.

Before joining Flavours, Somer gained valuable experience working on large-scale activations and product launches, where she assisted with everything from run sheets and venue sourcing to supplier coordination and event logistics — showcasing her natural organisational skills and creative flair.

She has also worked across various customer-facing roles in hospitality, giving her a strong foundation in service, communication, and fast-paced event environments. Her experience in digital marketing brings an added layer of creativity, with skills in content creation, Canva design, and campaign planning.

Driven, detail-oriented, and a true people person, Somer is passionate about delivering memorable guest experiences and being part of a collaborative, energetic events team.

Somer’s favourite Flavours items are the Vietnamese noodle salad and the petite lemon curd tarts. As a lover of cheese, Somer also loves the Farmhouse cheese platter!

Charlie Sullivan

Apprentice Chef

As our newest Apprentice Chef officially joining the Flavours team in 2022, Charlie has shown a great interest in the family business from a very young age. He first wore a Flavours Chef jacket at the age of just 4! With no babysitter available for the day, Charlie did a ‘day at work with mum’ for a catering job at the school he was actually going to be attending from the following year…. And so the seed was planted! He is passionate about food and all things hospitality and is always learning under the wing of our incredible kitchen team. No special treatment here, Charlie strives for excellence and excited about his role contributing to the shaping the future of Flavours.

With any free time, Charlie loves working on his 4WD, playing golf (he’s actually pretty good!) and binge watching a good TV series.

He loves that every day at Flavours is busy and challenging and makes the day fly by. His favourite menu item is the Roasted boneless chicken, lemon, garlic, thyme

Simon Sullivan

A very important part of the Flavours team, Simon is known for his fun and affectionate attitude around the office. As Belinda’s shadow when he comes to visit, Simon sits quietly in his spot in the office unless he’s just woken from a nap and needs some pats. Apologies in advance if you call us and hear Simon playing or barking in the background, he’s likely demanding a hand shake to which the office team will always oblige.

The newest member to join the Flavours fur-family, Barbara is a fluffy bundle of cuteness who loves to visit the office team for love, attention and pats. As a little shadow to Simon, Barbara loves to play tug-o-war before having a big nap under someone’s desk. She loves cuddles, stirring up Simon and running around the office when a burst of energy hits.
